Week of September 15, 2025 - Fairmount/444 N 4th Order Form

Hello everybody!!

I love the beginning of the holiday season! We begin, for some, with Rosh Hashanah, the Jewish New Year where we celebrate the holiday meal by dipping apple in honey. A way to wish for a sweet year to come. As we approach the autumnal equinox, this holiday kicks off a season as a reminder of the harvest season to come. You know? The thing i love most about the holidays, all of them, is the way food plays such an important role in connecting us to people in our community and around the world. We are all the same, deep down, for a precious few moments. No politics, no sides, no gaps, no different. That is something to appreciate if nothing else.

Anyway, onto the bounty for the week! We have gorgeous, and i mean gorgeous, fresh sushi grade albacore tuna from Hawaii! Tombo, they call it out there. Beautiful fish. Great for poke bowls. Great to quickly sear and serve up raw. For those looking to do that, here is the way to do it. Keep the portions patted dry and cold in your fridge until you are ready to sear. Get a pan very hot on your stove top. Add a bit of oil to the pan. Drop your tuna portions in a pan without crowding the pan and lowering the pan temp too much. Use a spatula to hold down the portion firmly but do not crush it. Count to 20 seconds. Flip, and do the same thing. Remove right away and pop it straight into your fridge so that it cools down right away and doesn't continue to cook. And voila!

Next up on the menu is some blast frozen cod cheeks from Iceland! Pretty little discs that sear up quickly and nicely with a little dredge. Make a nice butter sauce to go with that and enjoy! Tastes like cod, texture like scallops. What could be better?

We, of course, have sushi grade, top in class, Faroe Island salmon as well as Hokkaido scallops. A for the salmon, a few of you will be buying whole sides for Monday night's holiday dinner. Good stuff. We will also be at our shop Monday morning from 8am til noon if you wanted to stop by them to pick up one or two of them. No need to pre-order that. We'll have plenty.

We have butterflied rainbow trout and branzini! We have whole branzini scaled and gutted. Whole sides of Black cod which can always make a holiday table pop. We have fresh sardines and Boston mackerel fillets...

We have hamachi loin as well as the collar, or kama. Love that stuff. What a treat.

We also have gefilte fish logs from Raskins in Brooklyn. These come frozen and need to be baked or boiled by you. Instructions are on the package. These have been super popular over the past few years because, well, they are actually good. So there ya go...

We have shrimp and crab canneloni as well as swordfish meatballs. Plus, Osetra caviar by the ounce as well.

PEI mussels are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Belle Du Jours are the oysters this week from PEI. Nice and plump.

See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...

And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..

I know, I know. Lots of words but, hey, consider the alternative...
