Hello everybody!!
I know I talk a lot about the Spring changes. I talk a lot, generally speaking, but that's another story..hahaha...One of the things that can be easily missed as we make ourselves through the transition from winter deadness to summertime lifeness (poetic license her, people), is the sweep of commemorative holidays that remind us what is important. Of course, we have Passover and Easter with the underlying message of rebirth. And here comes Mother's Day. The ultimate commemoration of birth itself.
Now, you can celebrate this holiday any way you want. But for me, the tribute is for all the things that my mother gifted me. A love of food. A love of quality. A love of decency and manners. And every year, when I cook meals around this holiday, I deep dive into the emotional connection i have with my mother. I cook meals she made. I cook meals she would like. I cook meals that remind me of her more than anything else. The meal becomes the tribute and I am filled with gratitude and, usually, a big smile on my face. This is where celebration matters. Many of you have sent me stories of dishes you've made in memory of. Those are some of the best and most meaningful anyone could read.
So, to those mothers who are still with us, we celebrate you. And for those who are no longer with us, we remember and thank you. And, that's all I'm going to say about that.
Okay, back to the regularly scheduled program! First up on gthe docket is the first wave of fresh claw and knuckle lobster meat! This is the sweetest part of the lobster and the meat typically used for lobster rolls. You can make 5 rolls out of this one pound, FYI. But a nice pasta dish would be pretty amazing too, no? We have fresh buccatini this week, too!
And not to be outdone, fresh, sushi grade bigeye tuna from Australia in here!!! Lobster, poke bowls or tuna tartares? Yeah, that's how you honor your mother....
We have blast frozen steelhead trout this week! Sushi grade as well and so deliciously fatty. Just melts in your mouth. Honestly. One of my favorite cousins in the salmon family. (Actually, salmon is part of the trout family but that's another story).
Now let's talk crab meat. I really think you guys will love this stuff. One of our suppliers has decided to pack crab meat in a very different way. Instead of separating the claw, special, lump and jumbo lump, you get everything in one can! Basically, it's like you get the whole crab and all it's parts. And just so you know, one pound on meat is generated from about a dozen whole crabs. Think of all the work you would have to do besides how much they cost nowadays. And let me tell, I think it makes the best crab cake blend I've ever tasted. You get the sweet flavor from the claw, the lightness from the special and lump and the chunky nuggets of the jumbo lump. Amazing. Heck, a pasta dish with this meat does exactly the same thing! I hope you guys like it. Plus, at $28 per pound? A steal...
We have Faroe Island salmon and Hokkaido scallops. Best in class and both sushi grade, fresh or frozen.
We have butterflied rainbow trout and butterflied branzini which always makes for a sure meal. Check out my video on grilling branzino. It works for both. Also, a few of you have been asking about whole branzino so we have some for you this week. Scaled and gutted, of course...
We have Chilean seabass, Black cod...dang...so many items to play with!!
Fish meatballs in creamy pesto sauce are back!

We have Littleneck clams this week. Great thing to add to Settantatre Pasta Co fresh buccatini. Best cheap meal ever!!.Also, Love Shucks are the oysters this week from Maine ...good stuff..and briny..
