Week of December 1, 2025 - Fairmount/444 N 4th Order Form
Hello everybody!!
It's so good to be back in the swing of things. I missed the rhythm, the prep, the staff and connection to you all.
Okay then. Let's roll right into it. First up on the fresh side of things is fluke flounder fillet from New Jersey! This is one terrific fish for those who like something comforting while a nice heaping of elegance. A great fish to pan sear with a little dredge and turn into a Meuniere dish. Some of our cultured butter would be perfect for this too.Or, simply do the salt, pepper, olive oil thing and pop into a 425F oven for 12 minutes...melts in your mouth. (Personally, I enjoy making roulades with a half a fish cake and roasting in the oven at the same temp for 15 minutes..ooh la la...)
Next up is a December fave. Smelts!!! Frome the Canadian Great lakes, these little babies are such a treat! Eat them now or save them for Christmas if you can. I can't but you may be able to...so good.
As you guys start to accumulate items for your Seven Fishes, you gotta think of all the fun things you want to prepare. We have so many ways to go here. As an aside, I love that the culinary challenge and desire for a Seven Fishes meal has become such a big thing in Philly. It really is a Feast of a Feast. So much fun!
You can get Portuguese sardines, butterflied branzini, butterflied Rainbow trout, cod cheeks, squid tubes, shrimp of all kinds and, of course, Black cod fillets and Chilean Seabass fillets.
Now, we can't discount the importance of Faroe Island salmon and Hokkaido scallops from Japan. Both sushi grade and both best in class. No doubt about it..
And crab meat has been a bit tricky lately but we got our hands on some tasty pasteurized lump crab meat from Mexico...great stuff. Also, subbing in for cod loins, we have skinless and boneless barramundi fillets...yummy...
We have smoked trout back in stock as well as both the pie dough and puff pastry dough for your posh dishes or for you pot pies. Or both...plus, more lobster ravioli too!!
As for special items this week, this is Olive Oil week! The annual famous olive oil coming from the Vitagliano family right here in Philly. First cold press from their villa in Umbria just two weeks ago!. Villa Dei Sogni in Bevagna to be precise. A beautiful area in the center of italy alongside Tuscany. It is pretty unique to taste an olive oil coming from one single estate. Most is blended for bottling. But not this one. There is a real specificity and terroir to it. Clean tasting with a nice peppery taste, this is an olive oil that has a taste that goes on and on and on...like a fine wine, really. And the best part? We are the only ones in the world to taste it and enjoy it. Mille Grazie, Tom e Matt! Up to two per order please. If we have more left over, I promise we will let them loose...
So have at it!!!
PEI mussels are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Mere Points are the oysters this week from Maine . Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..
I know, I know. Lots of words but, hey, consider the alternative...
