Week of December 8, 2025 - Fairmount/444 N 4th Order Form
Hello everybody!!
Can you feel life speeding up? It's always like that at the end of the year. Barreling towards New Year's is an annual event. Holiday parties, family gatherings, winter breaks, ski or beach vacays coming and work to wrap up for the year. It can be quite stressful for many people. Even for us. We are super busy right now and pushing things to the limit. One thing to keep in mind is to appreciate the moments as well as the speed. Stress can easily be converted into excitement with the right frame of mind..
Anyway, let's roll into the goodies for the week. With nasty weather in the North Pacific, there will be no fresh Faroe Island salmon this week. Subbing in for a guest starring appearance will be fresh Steelhead trout fillets from Norway! This has become a favorite of so many of you. And for good reason. Mild, creamy, fatty, sushi grade and is prepared exactly the same you would with salmon. Great stuff...
And with this nasty weather up there, no cod cheeks from Iceland. They are having a hard time getting out on the rough seas..hopefully next week.
That being said, lots of really fun stuff to load up on. If you haven't started gathering for your 7 Fishes, don't wait. This is a good time to accumulate and finish off with your fresh fish and live shellfish.
We have smelts. We have Rainbow trout butterflied and branzini the same way. We have whole daurades scaled and gutted. We have Black Cod fillets as well as Chilean Seabass fillets. We have head on shrimp and sushi grade wild rock shrimp. We have Spanish mackerel fillets and Hokkaido scallops. We have tons of smoked fish to have fun with. Also, Portuguese sardines and barbounis (red mullets/rouget).
We have hamachi loins for sushi and crudo platters as well as the kamas (collars) for roasting up and enjoying..Lobster tails as well from South Africa. The best of the best!
We have smoked albacore tuna spread back on the list this week. We have a delish smoked bacon and cheddar sausage from El Camino. Also, more lobster ravioli..
We have more Lava Cakes from Good Good Chocolates in Queen Village. Great place to find local chocolates to eat or give as gifts. Top notch stuff.
We also have frozen raw foie gras slices perfect for searing up. Dynamite stuff...Fantastic cultured butter from Vermont and top tier short grain sushi rice on the best restos use...And Osetra caviar is back in stock...
And, once again, for anyone interested in a frozen whole suckling pig from a great open range farm in South Jersey, email me. We have a few left ranging from 14-20lb each so small enough to fit in a convention home oven...They are $10 per pound and have to be picked up from our shop, however. Most people are opting to pick up next Thursday, the 18th in order to give it enough time to thaw which is a good three or four days or so...
So have at it!!!
Littleneck clams are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Bombazines are the oysters this week from Maine . Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..
I know, I know. Lots of words but, hey, consider the alternative...
