Week of November 2, 2026 - Fairmount/444 N 4th Order Form

Hello everybody!!

How the heck is it November already??? Blink and it's Christmas...

Alright!! Let's get into it! First up this week is another shot of beautiful fluke flounder fillet! Local flounder, fluke, is not the same as the flounder in the sole family. In fact, fluke is the southern cousin of halibut. Flounder is just a category term, by the way. Like tree or car. There are different types that 'flounder' sideways in the see. This is our local one which is good since it is firmer and quite versatile. Pan sear with a little dredge in a hot pan, roast in the oven, stuff it with half a fish cake (my favorite). And, makes one killer ceviche too!

More fresh claw and knuckle lobster meat coming our way from Nova Scotia! Such a treat to have this around for lobster rolls or a nice pasta dish...

Super frozen chutoro!!! So, three main parts to the bluefin tuna. The red meat, akami. The belly, otoro. And the outer layer below the red meat, chutoro. The red meat is lean like a fillet mignon. The otoro is fatty like a ribeye. The chutoro is like a strip steak. A nice balance of fat to meat. Now, super frozen means we hold it at -60F and no preservatives are added to this which is always a good thing. The catch is you have a week or two to hold it in your freezer before you use it. It can brown due to oxidation of fat. Also, you have to thaw it out in a very specific way. In an ice bath. We have a video on our website that shows you how to do it. It takes an hour and a half to two hours to thaw but well worth it.

Fresh Faroe Island salmon is back this week! Another item you can add to your sushi party! As are Hokkaido scallops which are sushi grade as well!!

We have Greenland turbot fillets, rainbow trout and branzini butterflied, Black cod fillets, frozen Portuguese sardines and barbouni (rouget).

Hot smoked Faroe Island salmon (kippered) from our friends at El Camino is back! Jump on it!!

Tons of stuff, really. Everything to make your dreams come true...

We have PEI mussels this week. Great thing to add to Settantatre Pasta Co fresh bucatini. Best cheap meal ever!!.Also, Foghorn oysters this week from Massachussetts. Nice and big...good stuff..and briny..

So have at it!!!

See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...

And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..

I know, I know. Lots of words but, hey, consider the alternative...
