Week of October 12, 2026 - Fairmount/444 N 4th Order Form
Hello everybody!!
Well, it's good to be back. I miss my own bed. But, I have to say that visiting Northern European countries. Their love for fish and the importance it plays in their lives and history is truly beautiful. There is a younger generation also pushing the envelope with reconstructing the classic and traditional foods and moving them forward. Very cool. Edinburgh was an amazing food city that really surprised me. Fantastic, actually. And with direct flights from Philly, I mean, what a nice spot for a short trip. Plus, an hour away from St Andrews for the golf heads.
The northern city of Inverness, center of Highland Culture and administration was one fun town full of music and liveliness. Really pretty too. Not as touristy as Edinburgh and well worth the visit. On the way there, we made a pilgimage to Cullen, a fishing town on the North Sea famous for Cullen Skink. That's a smoked haddock cream soup. So friggin good. Something that probably was the inspiration for clam chowder over here. Instead of using bacon, the smoke comes from the fish. Couldn't get enough of it. That's something that could easily be made with our smoked mackerel too. A good fish soup on cooler days. Nice stuff.
Okay, more on my trip in the update next week. I could talk about it forever as you guys know. This week falling into our laps is fresh fluke flounder fillet from Rhode Island! We love our flounder around here. Great to dredge and pan fry or bake in the oven. Great to stuff with half a fish cake. Also great to use to make ceviches with...yup...
Speaking of ceviches, we still have more Opah top rack which is also sushi grade and terrific for that too!!
We have cod cheeks, Boston mackerel fillets, Chilean seabass sliders, butterflied branzini and rainbow trout.
Of course, our wonderful Faroe Island salmon from Hiddenfjord and Hokkaido scallops too. Both sushi grade and both the best of the best!!
Pasta this week will be fresh bucatini for a little change. Wagyu ground beef is back in the mix.
Tons of stuff, really. Everything to make your dreams come true...
We have Littleneck clams this week. Great thing to add to Settantatre Pasta Co fresh bucatini. Best cheap meal ever!!.Also, Northern Belles oysters his week from PEI. Nice and big...good stuff..and briny..
So have at it!!!
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..
I know, I know. Lots of words but, hey, consider the alternative...
