Well, here it is..Memorial Day Weekend...the unofficial beginning of summer!!! For us, it is extra special since we will be joining the Swarthmore Farmers Market for the first time! If you know anyone in that area that likes fish, have them go over to our main website to sign up for those emails so they can pre-order!
So, with the holiday weekend in mind, I thought that it would be nice to have an extravaganza of things to prepare! I mean, you could go out to grab some food out in resto world but, honestly, at this point you could cook it up better and cheaper so it's a no brainer. You don't want to compromise on quality and nor should you. But if you could save a few bucks? Come play with us..especially for the higher end products..
Many of you have been asking me about how I see the pricing of things going forward. I think i will write a separate email over the weekend related to this. It will be a bit wordy but it will cover a lot of what we see behind the curtain. To sum up, though, some things went up in price and others went down. Lots of volatility...
And guess went down just in time from its stratospheric prices for the past 8 months? Lobster meat!!!! Cooked claw and knuckle meat from Nova Scotia is back, baby!!!! Demand is low in restos generally as people are making the choice to eat more at home. So, the price has dropped like a rock!! Now, fresh cooked meat is the perfect thing for lobster rolls or pastas or risottos. Sweet, tender, juicy. We will vac pack them by the pound so they have a week to 10 day shelf life. If you would like to freeze some instead, no worries. You can do that too.
And since so many of you will be doing a party of one kind or another, how about hamachi loins!!! The perfect item to slice up, drizzle with our ponzu sauce and top off with jalapenos! That plate is always the first thing gone. Trust me.
While we are in the sushi mood, keep the hamachi for the group but for yourself, we have more super frozen Bluefin Otoro!!!! Held at -60F to preserve it, you will get world class quality for a fraction of the price you pay in a sushi resto. Just remember that there is a very specific way to thaw it out. Check out our video on our site for that...
To add to the fun for the grill, we have more hamachi kama!! Or collar, in the plainspeak. I mean, honestly, this is one of the most delicious things to dig into and even pick up and eat like it's a chicken thigh...Wow!
For some, summer means bluefish. Well, we have a shot that came in and we will fillet them and blast freeze! Have at it!!
We have head on wild Argentine red shrimp. We have wild rock shrimp. We have branzini butterflied. We have yellowtail snappers for whole fish scsaled and gutted!!! We have more Black cod fillets as well as South African lobster tails!
And for a special item (I really love this one) for the first time, we will be featuring some of the best lettuce I have ever had. This week, we will be featuring Red Butter lettuce. Now this is the thing that is so great about this stuff. Walt down in Delaware has a tilapia farm where he produces really nice fish for one particular customer. As an intelligent farmer, he started thinking about all the poop and such that gets filtered out and used for fertilzer around his area and decided that he wanted to use it himself and started growing hydroponic lettuce varieties closing the loop of the production of fish. Let me tell ya, this lettuce is crisp. It is flavorful. It has a super long shelf life. It's local. It's organic. It's all natural. But most of all, it is absolutely delicious..It makes supemarket lettuce taste like paper.. And at $5 a head, come on. Let's give this guy some encouragement that he is doing the right thing. Cause he is.
You see? How much fun we can have?
Littleneck clams are the shellfish of the week.... Mere Points are the oysters of the week out of Maine... We have lonsa and smoked fish..So many good things..
Plenty of crab meat, shrimp, etc....
I know, I know..Lots of words...
Anyway, as usual, I have to thank all of you guys for being in our lives. What an incredible community we live in...
