Hello everybody!!
I hope everyone celebrating Rosh Hashanah had a fine feast! For everyone else, i hope you celebrated the equinox and new moon combo in style. I don't really know for sure if the stars and celestial bodies determine our fate or not. But why ruin a good story with the truth...
Anyway, onto the goodies this week. One of the reasons that we love blast freezing fish is that we get the chance to accumulate great fish at times when it is abundant and save it for a time when not much stuff is around. This is that kind of week..We are in a weird transition period seasonally. A sort of doldrum, if you will. But cool stuff will be coming around pretty soon.
To start things off, we have blast frozen halibut fillets! Those of you who have bought our halibut blast frozen can attest to the quality of our freezing methods. The stuff is superb. A favorite of so many of you, grab it while you can. We will see one or maybe two more pops for it between now and the end of the season in November. So nothing better than the present...
We have beautiful rainbow trout butterflied fillets as well as branzini butterflied the same way. Super easy to prepare, packed in perfect portions for two people and better than the quality you will see even in a resto!
Speaking of restos, how about a stroll along the sushi brick road. We have sushi grade Faroe Island salmon as well as Hokkaido scallops. We have hamachi loin, also known as yellowtail, on hand. We have hamachi kama which is the collar and just amazing to roast up or grill. We have Black cod fillets, also known as sablefish, which you can marinate in miso glaze and roast and broil. We have nori sheets, wasabi powder, an amazing seaweed salad, great ponzu sauce and next week, we will start bringing in an excellent short grain sushi rice so stay tuned for that....Oh, and start things off with some shrimp shumai for an appetizer and things a golden...and a quarter of the price you would pay if you ordered out...just saying...
And now onto the smoked fish. Many of you will be purchasing smoked fish for the break fast of Yom Kippur next Thursday. Everything we carry has a pretty long shelf so all of it will be good to go. The smoked fish like salmon, kippered, trout and mackerel have a month shelf life in your fridge. The whitefish has a five week shelf life. And the tuna spread we made this week has a three week shelf life.
Many other things to play with so have fun, people! That's what it's about!!
Littleneck clams and mussels are the shellfish of the week. Best cheap meal ever! Malpeques are the oysters this week from PEI. Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...
And don't forget your frozen shrimp and condiments and sauces...And dog treats for doggies...
I know, I know. Lots of words but, hey, consider the alternative...
