November 3, 2022 Fitler/Rittenhouse/Washington Sq Order Form

Life is good, people!!! Let's be positive!! The Phillies winning games in the World Series is really good for my self-esteem. Not for my sleep or heart rate but good for my self-esteem...It's weird that it is so since I am not on the field mashing home runs but we take what we can get when it come to finding something to be proud of in this city. Eagles and Phillies....and fish...

Anyway, let's get onto the fish part. Beautiful local sword came in and is gorge! Local fresh sword is like nothing you've ever bought from supermarkets or restaurants. This is clean tasting, creamy textured, versatile stuff! I posted a few recipes for sword on our website. Everything from grilling it properly to Provencale and even piccata! And try grilling and serving it with our miso dashi tomato sauce. Ridick...

We haven't doner monkfish in almost 6 months and so glad to start doing it again. I believe that monkfish is at its best in the colder months. Like starting now. These monks come from Massachusetts where the waters are already pretty cold. Again, great to slice into medallions and sear up to a crisp. Great wrapped in prosciutto or bacon and roasted, and super great using Nigella Lawson's turmeric curry recipe I posted. Simple, perfumed, elegant, classy...

Beautiful Faroe Island salmon fillets coming your way again. So proud to be partnered with one of the few family owned farms that does everything right bacause they give a shit. No hormones, no antibiotics, open water pens, low carbon footprint. They produce a sushi grade salmon that will force you to rethink what salmon can be.

Same with Hokkaido scallops. These Japanese scallops are second to none for any worthy chef anywhere. The best of the best and sushi grade too!!

Two great specials to play with this week. First is more of the miso dashi tuna tomato sauce we made a few weeks back. The reviews were 5 star on it and no wonder. Kind of like making a puttanesca sauce but with the elegance and refinement of the Japanese sensibility. This sauce is great just tossed with pasta but is a great accompaniment for any seafood item whether it is sword, monk, scallops or fish cakes!!!

Also this week is something we are so giddy about because it is so damn good. Char Siu salmon! What is Char Siu, you say? Well, you know that roast pork you see hanging next to ducks at Sang Kee? That. You know that pork used for pork fried rice? That. But instead of pork, we did it with salmon. OMG. First of all, so good just eating chilled but is amazing heated up and served over white rice. Or salmon fried rice would be a hit! So would a nice stir fry! You won't find anything like this anywhere, folks. A true original...

Everyone is loving our pasteurized crab meat and I am so glad. A fraction of what the supermarkets are charging (the thieves) and the quality is superb. Pasteurized in a can a good in your fridge for a year. Can't beat it.

Mussels are the shellfish of the week. That tomato sauce with it? Oh, yeah. What a great cheap meal right there. Oysters will be Black Magics from PEI because we need a little voodoo pointing to the Astros...

Fun week to make meals before a game. What's better than fish, right? Winning the World Series and fish. That's what.

All the other usual suspects are around as well so have fun, take your time, hurry up and get your order in!

Here is the order form. Bring a bag! Bring a bag! Bring a bag!
