Hello everybody!!
What a fun range of stuff this week! We have everything from the sophisticated, pinky up in the air stuff to the down home and comfort stuff. Transitions, people. Brackish times call for a little bit of this and a little bit of that. Kind of like sporting a pair of jeans with a nice pair of shoes...
Okay, let's get to it! First up on the menu this week is gorgeous, local swordfish from Canada and Maine! Cold water sword is the best. Fatty, creamy, tender. Plus, this is in my humble opinion, one of those fish that has the largest range of cooking techniques applicable. I usually say that anything you can do with chicken breast, you can do with swordfish. You can grill it, roast it, pan sear it, poach it, braise it, kabob it, and stew it. Simple method for the newbies? Dust generously with one of our spice blends, spray with oil, let sit on your counter for 20 minutes as you heat up your oven to 425F, bake for 12 to 15 minutes. That's it! Or if you feel adventurous, make a nice puttanesca sauce and poach it in that. Wow!
Next up are two pinky up in the air items. Hamachi loin as well as Super frozen Otoro! Amazing sushi grade fish that really are the star of any show you put on at home. The hamachi makes one killer crudo and a terrific poke bowl! The super frozen otoro will absolutely melt in your mouth! You have one week to use it. Keep it in your freezer and thaw it following the instructions in the video on our site. Icebath is key.
Along with our sushi grade Faroe Island salmon which we have fresh as well as blast frozen, we also have a small shot of blast frozen steeelhead trout! Also sushi grade!
We have some Boston mackerel fillets as well as branzini butterflied available.You can't go wrong with Black cod fillets or sushi grade Hokkaido scallops.
As for the daurades from Greece, they mixed up sizes for us and gave us bigger ones than we usually get. These guys are 1.5lb each as opposed to 1lb each. So, basically, they pack will be more expensive. However, one fish feed two people so there you go. One thing for sure, these things are beautiful!
For special items, we have Canadian bacon from El Camino! This is the real deal stuff. Smoked pork tenderloin! Love this stuff...Also, shrimp and crab canneloni are back from Settantatre Pasta co.
Plus, as I mentioned yesterday, beautiful romaine lettuce from Sussex Fresh in Delaware. This lettuce comes from a tilapia farm down there that uses the nutrient rich runoff from the fish farm to fertilize the lettuce. Closed loop and wholly organic and all natural. You have to see this stuff. Nothing like what you get in a supermarket. And check out the recipe I posted on our site for an easy Caesar dressing. That with a nice piece of swordfish? yeah....
PEI mussels are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Summer Loves are the oysters this week from PEI. Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
