Week of August 4, 2025 - Fairmount/444 N 4th Order Form
Hello everybody!!
Just loving this weather! So nice to be able to walk around and not turn into a sopping mess...maybe that's just me..
Anyway, onto the fish! A nice little surprise addition this week coming from the Southern Hemisphere...Chilean seabass fillets!!! Gotta love this fish. It is moist. It is tender. It is mild. It is delicious! It also costs a fortune in restos but not with us when you do the comparison. We keep the sides whole, skin on and bone out for one beautiful presentation. They range from 1-1.8lb each. What a crowd pleaser. The nice thing about this fish is that it nearly impossible to dry it out. It is that fatty. You can miso glaze it or simply season with your favorite mix and olive oil and roast in the oven at 450F for 12-15 minutes depending on your oven. Superstar...
Also, let's head over to Japan for a quick visit and grab some hamachi! You get your choice of the parts you want depending on what you are in the mood for. You can opt for the loin which is skinless and boneless and meant for sushi. Awesome stuff.. Or you can opt for the kama which is the collar and is meant to roast up in the oven or pop on the grill. Better than chicken wings, I promise. Or get both and enjoy them in combo for a nice conversation piece...
We have more blast frozen halibut portions. Just so you guys know, we always blast freeze every portion separately and then vac pack it so you can pull out one or two pieces at a time. Then wrap up the rest and pop them back in your freezer. That goes for everything. Salmon, scallops, branzini, etc..
We have cod cheeks this week! Yay! We have rock shrimp and head on shrimp. We have branzini and whole daurades...
And Faroe Island salmon from Hiddenfjord is back! Another yay! Fresh, sushi grade and the best of the best..
We have more swordfish meatballs in pistachio pesto cream sauce from Settantatre Pasta Co. More fabulous Spring honey harvest from Adams/Ryland in Malvern.
PEI mussels are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Sand Dunes are the oysters this week from PEI. Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...
And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..
I know, I know. Lots of words but, hey, consider the alternative...
