Week of June 9, 2025 - Fairmount/444 N 4th Order Form

Hello everybody!!

So many good things this week for Father's Day weekend! For myself and for most dads I know, we have particular affinities for gifts that can range pretty wide in nature. Give me a nice steak or Chilean seabass. Absolutely. But I also want a great hot dog or fish cake. Fellas, you know what I mean...

Anyway, let's roll into it! First up is gorgeous Chilean seabass fillets for you all! Ranging from 1.2-1.8oz each, these things are just amazing. Probably the most expensive fish you see on a resto menu but you can have it for a fraction of the price (and probably cook it better anyway).

Next up is a primal cut of fish. Hamachi kama!! The collar or neck of the fish is probably the tastiest part and the most interesting part to look at. Delicious and primitive in its presentation but oh so good! Simple too. Salt pepper, olive oil, 450F oven for 12 minutes skin side up and a quick broil for 3 minutes to crisp up the skin. Better than chicken wings or thighs..

Also, how about the king of mackerels, King mackerel! We cut across the bone to make steaks. This is how you get all the flavor in the fish. So friggin good when cooked up in a spicy pepper tomato sauce, Indian curry or Thai curry. 

Speaking of things that go well in a sauce or curry, skate cheeks! Now, of course, you could simply dredge and pan fry them. Totally. But you could also pop them into a sauce cause they won't fall apart and guess what? Tastes just like a combo between scallops and crabmeat! (it's what they eat so no surprise..)

Plenty of gorgeous Faroe Island salmon and Hokkaido scallops. Both sushi grade.. so good thing to add to the table for a diverse poke bowl choice. Salmon and scallops..sound good, right? And the color action on that. Makes me salivate..

We have Black cod fillets, branzini butterflied, lobster tails, whole daurades, wild Argentine Red head on shrimp (the big ones), wild rock shrimp.

For speical items, we have American wagyu boneless ribeye from Stonyrun Farm in Royerford! Grass fed, hay finished, nicely marbled. Great flavor...Also, as stated above, we have plenty of wagyu ground beef and El Camino hot dogs plus a small shot of Red Incised lettuce from our friends in Sussex county, Delaware. 

PEI mussels are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Pleasant Coves are the oysters this week from Maine. Nice and plump. 

See what I mean?? All this good to stuff to choose from.... Life is good...You'll never need to leave the house...

And don't forget your frozen shrimp, crab meat, and condiments and sauces...And dog treats for doggies...Coddy Canes are back too..

I know, I know. Lots of words but, hey, consider the alternative...
