Hello everybody!!
I love weeks where we have a mish mash of things. It's fun to think of all the possibilities and all the variety. When you get to that point where you don't know what you want because it all looks good, it's good.
So let's roll into the sushi portion of the menu. First up, Super frozen otoro!! This is the fatty belly of the bluefin tuna. The most prized part and also the most expensive in sushi restos. We have a terrific supplier in Croatia that portions, super freezes the approx half pound blocks down to -60F and ships them to us. The stuff is amazing. Melts in your mouth. And you get a half pound instead of a couple of slices in a resto for the same price. No brainer...Follow the instructions on our site for how to thaw. Very important..
Next up, hamachi loin!! Also known as yellowtail in soosh spots, this stuff is super high quality. Everyone who has had it can attest to the fact that it is terrific. An easy crudo recipe? Slice thinly, top with sliced jalapenos and drizzle with our ponzu sauce. Voila!!!
Next up is Madai. New Zealand sea bream which we had flown in and filleted and vac packed. Sushi grade just beautiful. We have a limited amount since we've never had it before and I'm not sure how it will be received. So, let's give it a whirl!
Of course, our Faroe Island salmon is sushi grade as well as our Hokkaido scallops as well!
Then we have a special item that popped into our lap, Spanish mackerel from North Carolina! The first run of the season down there and the stuff is beautiful. Try your hand at the polenta crusted recipe on our site, Italian style, or the Choo Chee red curry, Thai style. Both amazing!
From Brasil, whole yellowtail snappers, scaled and gutted! For the whole fish lovers..
We have more lobster claw and knuckle meat and, hopefully, for the next few weeks but I am not sure and we will have to see. Between biomass and tariffs...
Lots of other good stuff like branzini butterflied head on shrimp, rock shrimp, lobster tails, blah, blah, blah..
And fish meatballs in creamy pistachio pesto sauce. A nice bland of different fishies. Tuna, swordfish, halibut, haddock...tasty stuff. And we make them a bit bigger so 10z instead of 8oz. These are delish!
Littleneck clams are the shellfish of the week. And with organic fresh spinach linguini from Settantatre Pasta Co? Best cheap meal ever! Island Pearls from PEI are the oysters this week. Nice and plump.
See what I mean?? All this good to stuff to choose from.... Life is good...
And don't forget your frozen shrimp and condiments and sauces...And dog treats for doggies...
