Sept 27 Small World Seafood Update

What a beautiful weekend! Town was full of people walking around, eating out, sitting in the park, exercising and having fun! Toss in some seafood prep at home and you couldn't get any better than that! I mean, anyone complaining about trivialities the past few days isn't right...right?

Anyway, love what you all have been doing with the fresh albacore, salmon and scallops! great pics of dishes in your home that rival anything you could get in restaurant in a more relaxing atmosphere and at a cheaper cost. Nicely done to all. Big applause.

This week, we will take a divergence from some of the sushi stuff to get to more comfort-y kind of food and revisit something we haven't really played with in many months. Dredges and batters. 

For fish this week, we will look to our northern friends for some beautiful fresh haddock fillets! We've been selling some frozen haddock loins which are cuts that come from larger fish and produce a type of block cut. These fresh haddock fillets actually come from smaller fish off of the Cape which produce 5-7 fillets which are flatter with a thin skin on and perfect for sauteing a la meuniere or how about some fish and chips? Now, some of you all know how to do this now but many of you are new to us so you missed a January email on how to dredge and batter fish. Besides the instruction, we place an emphasis on pan or oil temperature. No more gummy, greasy fish. For those who would like to learn how to deep fry properly, we will be selling frying thermometers as well so you could get it right. They are cheap and will change your life! The salmon of the week is back to 'salmon salmon'. This time, we are going back to Norway for some nice fillets on the larger side, meaning a little fattier and more flavorful. This fish is sushi grade so have fun with your pokes bowls and such!

Mussels are the shellfish of the week. Oysters will be from Eel Lake in New Brunswick (Canada not New Jersey). Shrimp shumai are around. Aren't these little things the perfect snack? Lots of positive reviews about the new smoked salmon. Awesome. Scallops are around this week. Yay!
