 HELLO EVERYBODY!!!

Valentine's Day weekend, Chinese New Year starts Friday (Year of the Ox - steady, dependable), goodbye to the Rat and Presidents Day on Monday. Days are getting longer and vaccinations are starting to roll out. Lots to celebrate!

First offering is frozen South African lobster tails. 4-4.5oz each. Two per order. These little darlings are the top of the line in lobster tails. In fact, you can find them in steakhouses around the city where they charge anywhere from $60 to $79i for two tails. We are charging $25 for 2. It's a great deal. Some of you have asked how to prepare them. I like to split them in half, lengthwise, saute them in a pan meat side down first for about 4 minutes, flip them to the shell side for three minutes with a nice slab of Bibou's parsley butter and a sprinkle of salt and finally flip them back meat side down. I turn off the heat, place a lid on the pan and let the butter and lobster have a little privacy for about 5 minutes. They love each other...

Next is Lobster meat. This is COOKED claw and knuckle meat from Canadian lobsters. Just the best part of the creature for sweetness and tenderness. Shelf life in the fridge is a week so you have plenty of time to play with it. Perfect for lobster rolls but just as good for a Newburg if you have puff pastry left (we have a few left if you forgot to get some - email us) or maybe lobster ravioli if you want to take the time. Next, Tuna. Sushi grade (referred to as #1 tuna in the trade). Great for sashimi, sushi rolls, crudos, seared tuna or tartares. We have a few good recipes for seared tuna on our website, smallworldseafood.com. Here is a good one for simple Tuna tartare. You would pay $20 for a 2oz portion in a restaurant. You pay $18 per POUND. You could make eight of them. Wow.

Other special things to think about this week. Lobster stock. Just a great thing to have on hand to make a bisque but so useful for maybe a paella or think of a nice mushroom risotto with lobster stock. Oh, yeah. Mushrooms!!! Mycopolitan's good stuff. Butter loves mushrooms too, the hussey..Clams are here this week (5-7 day shelf life). Salmon is looking great this week. Lastly, trout roe is added to the list of smoked/cured items. A great thing for brunch this weekend. 

Phew...what a week of goodies. I won't see everybody before the weekend but I wish you all a happy Valentine's Day and a healthy and prosperous Year of the Ox.
