 GOOD MORNING EVERYBODY!!!

A tricky week for fish with the Delta keeping lots of boats in due to high winds. So, without complicating things or trying to force the issue on a second fish, we will stick with the one and only Albacore!!

This beautiful fish is quite versatile in its use. It can be seared, ceviched, roasted, grilled, sesame crusted, simmered, poached in olive oil...Forrest Gump would have loved its use...It's local and inexpensive to boot. I posted a couple of recipes on the website, smallworldseafood.com.

Salmon has taken a small dip down in price so we are passing that along. It is $9.50lb instead of $10lb. Speaking of salmon, I know that many of you have been having so much fun trying new fish and new recipes. We LOVE that about you all. One thing I was thinking is that there is a lot of fun to be had with trying to prepare the same fish in many different ways, as well. That can get routine, too, until you unleash some possibilities. So, in that spirit, I have posted a video on the  website that may inspire you to see salmon a little differently.

A couple of new things we are featuring this week come from two inventive culinary people. The first is escargots with herb butter from Pierre Calmels, owner of Bibou in South Philly. One of the pre-eminent chefs in our city, he cooks these little devils in a wine bouillon for a couple of hours and tops them off with a slab of garlic herb butter. All you have to do is reheat in the oven without the plastic lid, of course, or place it in a nice porcelain crock and make pretend you made them yourself. Oh, come on, tell me you never did that. Lastly, smoked fish. First of all, lots of you have been asking for smoked trout so that is back this week. Secondly, some of you have commented that the chunky whitefish was not chunky enough. I love you guys, I swear. I talked to them and told them to crank up the chunk! There was a long pause on the other end of the phone. I am not sure why but they delivered a chunkier whitefish for sure.
