 GOOD MORNING EVERYONE!

We are very excited to roll into a different fish always reminds me of the Caribbean. Yellowtail snapper! We will be selling it in two forms. You can choose to have it in the form of fillets or in the form of whole fish. The fillets are skin on. These fish are between 1.25lbs and 1.75lb so the fillets will be around 6oz each or so. For those who are getting whole fish, it will be gutted, gilled, scaled and ready to bake or grill. As with any other fresh product, you can certainly freeze what you do not plan on using.

Also, we are featuring squid tubes and tentacles! Most squid, like shrimp, come in frozen form. These are really nice loligo squid that are very tender when cooked. There are many ways to prepare squid including frying and sauteing. Here is a nice little recipe for the slow cooked method.

Speaking of recipes..We have a lot of new people that have signed up that have missed out on some of the earlier offerings and recipes. To give you a good place for resourcing seafood recipes, I've added a page to my website, smallworldseafood.com, that lists many good ones. I plan on continuing to expand that list over time to help everyone have a place to go to find a quick recipe to try out. 

I am also adding Super Lump crab meat as an option for this week. After all, it's the long weekend and a nice little crabcake should be on the menu. Super Lump is basically broken jumbo lump so really flavorful but chunkier than the lump. I like to mix this in half and half when I make crabcakes. I mix in all the ingredients and LASTLY fold in the super lump so that it doesn't get broken down much further. This way, you can have a crabby crabcake with big pieces throughout. Just a two bit tip. This is a great recipe you can try.
