GOOD MORNING EVERYBODY!
It's kind of nice to have red snapper back! Snapper is one of those items that has been affected by Covid in weird ways. Brasil and Mexico are the largest markets for red snapper in the Americas. They are, as many of you may know, quite severely affected by steep rises in Covid infections. That has affected fishermen, truckers, processors, etc down there suppressing supply everywhere. We got lucky getting these from Trinidad where things haven't been so bad. There are a couple of great recipes on our website but have fun with this fish. You can do anything with it. Please, though, send us some pics!! We would love to see what you are doing.
Clams were such a success last week that we decided to do them again. Besides, mussels are still in the midst of spawning so we are staying away from them until the coast is clear.
As I mentioned in the last email, we decided to offer two sizes of shrimp from now on. The larger 13/15 peeled, deveined and tail on as well as the 26/30 peeled, deveined and tail off. One is great for cocktails, scampi and the other for everyday pasta as well as shrimp burgers, salads or tapas. I posted a great recipe for 'bang bang' shrimp on the website. Worth a try. Everyone will love you more. Trust me.
Also on the frozen side, we are going with frozen Icelandic cod loins this week instead of mahi. Great bone white fish for off days from fresh.
